Vegan, not for me

Dinner last night was thing delectible Italian treat. I made spiral pasta and then added plain tomato sauce and some melted pepperjack cheese on top. I placed the prepared bowls of past in the own with the cheese and then allowed them to melt. I also stopped by Whole Foods on the way home from work and got the foccacia pictured on the right. It was sundried tomato and basil. Flaky, salty, delicious. Bonus points too because the bf actually ate something I made.

So on other food related news, my pictures from today won't load. Weird. So I'm sorry about that! I had some overnight oats for breakfast though that were superb. 
1/2 c oats
1/2 almond milk
5 strawberries
Plus I had some coffee with almond milk mixed in.

For a snack I had nectarine X2 and 10 almonds.
I also enjoyed a roasted red pepper, eggplant, and avocado sandwich on some Great Harvest bread. Accompanied by a mini side salad with raspberry dressing.

I also spent some time today reading/researching the vegan diet/lifestyle. I think I've concluded it's not for me. I thought it was worth looking into because I don't particularly like meat and dairy products make e feel not great. I guess I'm lactose intolerant. However, while researching the lifestyle choice I was getting the distinct impression that it was a very deliberate attempt to "save the world" one person at a time. I fully support this. However, for me the choice would be a nutritional one. I want a diet that is nutritionally sound and enjoyable. I came across some information regarding vegans and bone density as well as the idea of having to take multiple supplements. Not my bag of tea. I like things from the earth, unprocessed. 
On this note, I do plan to limit my intake of dairy products a great deal. As well as continue on my path of little t no meat. It's seemed to work for me so far. 
With that declaration, I'm off to sushi for dinner. I love fish, what can I say.

  1. Although I do enjoy some vegan choices food-wise I could NEVER be vegan. Besides the fact that I enjoy some meat, being that restrictive in my diet just does not work for me. But kudos to those who it does work for!
